EGO eats: Spinach Ricotta Muffins!

Hi Egos, after all that foodporn in New York it was time for some good old homemade food. At first I wanted to make something sweet but let's be honest: I could eat ice cream 24/7 right now and the amount I'm eating is quite close to that :D I'm serious: If ice cream had everything a person needs to stay healthy I'd eat nothing else.


So my consciousness got the best of me and made buy groceries not only for a hearty meal but also a veggie meal - which was unintentional but even more healthy! After being unable to resist my second weakness my way home from the grocery store looked rather funny to outsiders. I was carrying two bags of groceries, my handbag and a huge watermelon while juggling with my keys. 






After a short break from this adventure I finally got to the good part: The baking.

Ingredients for 12 muffins:
250 g ricotta
150 g spinach
4 Tbsp basil
1 tbsp Italian herbs
50 g grated Parmesan (or you can make it 100 g :D)
2 eggs
200 ml milk
60 g butter
280 g flour
3 tbsp baking powder
1 tbsp sugar
salt and pepper according to your preference 

First start by preparing the spinach. If you bought frozen spinach you should let it defrost it and drain it well. You don't want your muffins to become soups, okay?

Then melt the butter and mix it with the eggs and milk. In another bowl mix the flour, sugar, salt, pepper and baking powder together. Add the liquid mixture to the dry ingredients but mix them gently. You want them to be one mixture but not a very smooth one. It should all stick together and look a little like this:


Now comes the best part! Add the Parmesan, spinach, basil, Italian herbs and ricotta! Once again be careful to do that gently. Spread it in your little muffin cups and leave it in the oven for about 20 minutes. You can put a stick in them to see if they're good. There should be no dough on your stick and the tops should start to get brown.




I totally love these muffins. They are healthy, fill you when you feel like you're hungry and are so rare to get anywhere.
